This raita is perfect as an accompaniment with almost everything or even on its own. Serve it with parathas or as a spread on rusks or as a cooler.
Cucumber - 1/2 cup grated (reserve the juice)
Greek style yogurt - 1 cup (you can use hung natural yogurt too)
Salt - 1/2 tsp
Sugar - 1/2 tsp
Freshly ground cumin - 1/2 tsp
Mint leaves - about 10 leaves
Mustard Seeds - 1/2 tsp
Dry red chillies - 2
1 tsp oil for tempering
Whisk the yogurt, mint leaves, grated cucumber, the cucumber juice with a hand whisk Leave to stand for a few minutes.
Heat oil in a pan and add the chillies and mustard seeds. Take off heat when the seeds start spluttering. Add this to the yogurt mix.
Sprinkle in the cumin, salt and sugar and mix roughly. Serve cool.
